Locally owned and operated since 1989, Haystack Mountain produces an internationally recognized, wide selection of handcrafted raw and pasteurized cheeses. Haystack Mountain cheeses exhibit exceptionally fresh, clean flavors and textures—a direct result of the pure, high-quality dairy milk produced by our partner family farms and the skill of our award-winning cheesemaker, Jackie Chang.
Haystack Mountain cheeses are award-winning, handmade and free of additives or preservatives. We use the highest quality microbial (aka vegetarian) rennet, traditional cheesemaking techniques, and our cheeses embody the art, heart and place of what makes Haystack Mountain Creamery so special.
Our detailed process changes with each type of cheese we make but the majority of processes we follow are historical practices done by hand. We take great pride in how we make our cheese and we invite you to learn a bit more about the details of our process.
