Soft-Ripened Goat Cheese

Haystack Peak is a pyramid-shaped mound of soft-ripened cheese with a distinguishing edible ash outside the rind. The cheese ripens from the outside to the center. The cheese is creamy, light, slightly lemony and mildly goaty. The white paste has the classic chèvre flavors, the cream line is a nice gooey texture but earthier.

Try with a crisp Sancerre or fruity white wines such as Riesling or Gewurztraminer.
